This amazing recipe is from Talia's Clean Eating Cookbook - which is FULL of scrumptious detox-friendly recipes from breakfast, lunch, dinner, snacks, dessert, and everything in between. 

This has to be one of the most beautiful recipes in this book. In order to keep it healthy, make sure you stick to 70% dark chocolate or higher. It has less sugar and more fiber. I like adding coconut oil to the melted chocolate because I find it gives the bark a nice, glossy finish. You can get creative and add any toppings you like but the pistachios, cranberries and fleur de sel work like magic.

CHOCOLATE BARK WITH PISTACHIO + CRANBERRY + FLEUR DE SEL

INGREDIENTS: 

  • 1 x 70% dark chocolate bar (100g) I like Green & Blacks
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon raw coconut oil
  • 2 Tablespoons raw pistachios, chopped
  • 2 Tablespoons dried cranberries chopped
  • Tiny pinch fleur de sel (or regular sea salt if you don't have the fancy stuff!)

INSTRUCTIONS: 

  1. Set up a small baking sheet lined with a Silpat. If you don’t have a Silpat parchment paper will work as well.
  2. Set up a double boiler by placing a heatproof bowl over a pot of boiling water. Make sure the bottom of the bowl does not touch the water.
  3. Add chocolate, vanilla and coconut oil, stirring constantly with a spatula, until chocolate is 80% melted. Remove bowl from heat and continue to stir until chocolate is 100% melted and there are no chunks.
  4. Immediately pour melted chocolate onto the sheet tray. Pick up sheet tray and gently tilt it back and forth, and side to side so that chocolate spreads, until you’ve reached the ideal shape, size and thinness of for your bark. I like it quite thin. Once spread, sprinkle cranberries and pistachios onto the bark. Finish it off by sprinkling a tiny pinch of fleur de sel onto bark with your hand high up, to ensure it goes on evenly and not in clumps.
  5. Place sheet tray in the freezer for 10 minutes or until chocolate is completely set. Once chocolate is set, gently peel the bark of the Silpat or parchment. Break into pieces.
  6. Transfer chocolate pieces to airtight container and store in the fridge or freezer.
  7. Put in a pretty tin and give as a gift, OR save it all for yourself and SNACK AWAY!
